Ingredients
- Tomato: 1 pound(s), any kind, cored, sliced or chopped
- Nectarine: 1 pound(s), pitted, cut into thick wedges
- Extra virgin olive oil: 2 Tbsp
- Fresh lime juice: 2 Tbsp
- Kosher salt: ½ tsp, or to taste
- Arugula: 5 cup(s), baby variety
- Scallions: 4 medium, ends trimmed, thinly sliced
- Oil roasted salted pumpkin seeds (pepitas): 3 Tbsp
Instructions
- Place tomatoes and nectarines in a large mixing bowl; drizzle with oil and lime juice. Sprinkle with salt; gently combine with your hands.
- Place arugula on a large serving platter; spoon tomato mixture over top. Sprinkle with scallions and pumpkin seeds; serve immediately.
