    Ingredients

    • Tomato: 1 pound(s), any kind, cored, sliced or chopped 
    • Nectarine: 1 pound(s), pitted, cut into thick wedges 
    • Extra virgin olive oil: 2 Tbsp
    • Fresh lime juice: 2 Tbsp
    • Kosher salt: ½ tsp, or to taste 
    • Arugula: 5 cup(s), baby variety 
    • Scallions: 4 medium, ends trimmed, thinly sliced 
    • Oil roasted salted pumpkin seeds (pepitas): 3 Tbsp

    Instructions

    • Place tomatoes and nectarines in a large mixing bowl; drizzle with oil and lime juice. Sprinkle with salt; gently combine with your hands. 
    • Place arugula on a large serving platter; spoon tomato mixture over top. Sprinkle with scallions and pumpkin seeds; serve immediately.
